Zucchini Drop Cookies recipe

These zucchini-based cookies are greatas a healthy snack. The kids will love finding a few in theirlunchbox.

Recipe: Zucchini Drop Cookies

1 cup grated zucchini
1 cup granulated sugar
1/2 cup butter, softened
1 large egg, beaten
2 cups all-purpose flour1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
1 cup chopped nuts
1 cup raisins

  • Preheat oven to 375°F (190°C).Grease a baking sheet and set aside.
  • In a bowl combine zucchini with sugarand butter. Add beaten egg. Beat till thoroughly combined.
  • Sift flour, cinnamon, cloves, nutmeg andsalt. Add to the creamed mixture.
  • Stir in nuts and raisins.
  • Drop by rounded teaspoons 2 inches apartonto baking sheet.
  • Bake for 12 to 15 minutes.
  • Transfer to wire racks to cool.

    Makes 24 cookies.
