Zesty Anchovy Appetizers recipe

Miniature rye bread slices are topped witha mixture of Swiss cheese, anchovies, flat-leaf parsley, mayo,fresh lemon juice and black pepper, and then broiled until hot.

Recipe: Zesty Anchovy Appetizers

2 cups shredded Swiss cheese
2 ounces chopped anchovies
1 tablespoon chopped fresh flat-leaf parsley
1 tablespoon mayonnaise
1 tablespoon fresh lemon juice
1/8 teaspoon ground black pepper
20 slices miniature rye bread

  • In a medium bowl combine shredded Swisscheese, chopped anchovies, chopped parsley, mayonnaise, lemonjuice, and pepper; mix well.
  • Divide over rye bread, spreading evenly.
  • Broil for 2 minutes, or until hot. Placeon a serving dish.

    Makes 20 servings.
