Yummie Sweet Potato Rolls recipe

Special dinner rolls for the holidays oranytime of the year.

Recipe: Yummie Sweet PotatoRolls

1/2 cup vegetable shortening1 cup sweet potatoes, hot mashed2 teaspoons salt2/3 cup granulated sugar1 pint lukewarm milk1 (1/4 ounce) package active dry granularyeast2 large eggs6 cups sifted all-purpose flour (approximately)

  • Mix shortening with sweet potatoes, saltand sugar.
  • Dissolve yeast in warm milk and add tosweet potato mixture.
  • Beat eggs in bowl in which dough is tobe mixed. Pour in sweet potato mixture and stir well. Add flourto make a soft dough. Rub surface with melted shortening. Coverand leave in warm place to rise to double in bulk.
  • Form into rolls and let rise again untildouble in bulk.
  • Bake in 400°F (205°C) oven for15 minutes or until done.

    Makes 5 dozen rolls.

    I am Celiac, but these looked so good I read the recipe and decided to use my gluten free bread flour and follow the directions you had with out the wheat gluten of course, and they turned out delicious. So soft, not crumbly like most other gf breads that are so course and no flavor. Love this idea of using sweet potatoes as they are my favorite. Thanx!! These sound so yummy! Have you ever tried making them with an egg replacer? DO you think it would work? Have an egg allergic child that I am sure would love them too.
