Wilted Spinach with Apples and Feta Cheese recipe

Wilted spinach salad with sliced greenonions, crisp pieces of chopped apple and tangy feta cheese crumblestossed in a warm apple cider vinaigrette and garnished with crumbledbacon and chopped hard-cooked egg.

Recipe: Wilted Spinach withApples and Feta Cheese

8 cups torn spinach1/4 cup sliced green onions4 slices bacon4 tablespoons cider vinegar1 1/2 teaspoons granulated sugar1/2 teaspoon dry mustard1 cup sliced or chopped apple1/3 cup crumbled feta cheese2 hard-cooked eggs

  • In a large bowl combine the spinach andgreen onions; set aside.
  • In a large skillet cook the bacon overmedium heat until crisp. Remove the bacon, reserving 2 tablespoonsof the drippings in skillet. Drain bacon on paper towels; crumbleand set aside.
  • Carefully stir vinegar, sugar, and mustardinto reserved drippings; bring just to boiling. Add apple andcheese. Toss lightly and transfer to a serving bowl.
  • Remove the yolk from the hard-cooked egg;press yolk through a sieve. Chop the egg white. Sprinkle saladwith egg yolk and white and bacon. Serve immediately.

    Makes 4 to 6 servings servings.
