Whole Wheat Oatmeal Cookies recipe

Forget what you think you know about whole-wheatsweets — these toothsome treats are moist and deliciously spicy.

Recipe: Whole Wheat OatmealCookies

1 cup unsalted butter
1/4 cup honey
1/4 cup pure maple syrup
2 large eggs
1/2 cup milk
1 tablespoon molasses
3 cups quick-cooking oats
1 3/4 cups whole wheat flour
1/4 teaspoon ground nutmeg
1/2 cup chopped walnuts
1/2 cup raisins

  • Preheat oven to 350°F (175°C).Lightly grease two baking sheets; set aside.
  • Cream butter with honey and maple syrup.Whisk eggs with milk and molasses; beat egg mixture into buttermixture (resulting mixture may appear curdled). Set aside.
  • Combine oatmeal with whole wheat flour,nutmeg, walnuts and raisins. Stir into butter mixture until well-blended.
  • Drop by tablespoonfuls onto greased bakingsheets.
  • Bake for 7 to 10 minutes or until topsare browned.

    Makes 72 cookies.

    This is an oatmeal raisin cookie developed to use vegetable oil instead of solid fats. It is a slight modification of one with which I won first place in a company sponsored contest where I work.
