Wedge Salad.

One of life’s simple dining pleasures isa refreshing wedge salad made with cool, crisp iceberg lettuceand topped with creamy blue cheese dressing, bacon crumbles andjuicy, red ripe tomato.

Recipe: Wedge Salad

1 head of iceberg lettuce, clean and wellchilledBlueCheese DressingCrisp bacon crumblesTomato, cut into wedges or diced

  • Several hours before serving, core theiceberg lettuce by slamming the whole head of lettuce, core-sidedown on the kitchen counter top, then twist out the core. Removeany outer leaves that are undesirable and wash thoroughly, insideand out, with running water. Shake out as much water as possibleover the sink and then drain thoroughly on paper towels. Oncethe lettuce is well-drained, refrigerate in a covered containeror sealed plastic bag for several hours or overnight so thatit can crisp up (this step is vital for the perfect wedge salad,so don’t skip it).
  • When ready to serve, cut the head of lettuceinto 1 wedge per person and place each on a chilled serving plate.Drizzle blue cheese dressing over the wedge and sprinkle withthe bacon crumbles and diced tomatoes, or if using tomato wedges,place them around the lettuce.
  • Serve immediately.
