Warm Vegetable Salad in Peanut Sauce (Gado-Gado) recipe

Recipe: Warm Vegetable Saladin Peanut Sauce (Gado-Gado)

2 potatoes
1 cup of bean sprouts
7 to 10 string beans/other beans – cut into 1/2-inch pieces (about2 cm)
1 cup chopped green cabbage (optional)
8 to 12 ounces tofu, drained
1 medium cucumber, sliced in rounds
5 tablespoons vegetable oil

Peanut Sauce:
1 cup of unsalted peanuts
1 or 2 small chilies
2 tablespoons warm water
Palm sugar (or substitute with brown sugar)
1 tablespoon lime juice

  • Boil all the vegetables (except tofu andcucumber) or steam until crisp-tender. Set aside.
  • Cut the tofu into small pieces and fryuntil golden brown. Set a side
  • Grind the unsalted peanuts with chilies,salt and enough sugar (as desired) until all is well mixed andsoft. Add warm water and lime juice.
  • Place the cooked vegetables on a plate,top with the tofu and cucumber slices and pour the peanut sauceon last.

    Makes 2 servings.
