Walnut Mint Cream Cheese Bars recipe

These decadent dessert bars have a richchocolate walnut-shortbread crust, with a creamy mint cheesecakefilling topped with a decorative drizzle of semisweet chocolate.

Recipe: Walnut Mint CreamCheese Bars

Bars:1/2 cup plus 2 tablespoons butter – divideduse
1 1/2 cups (about 45 wafers) vanilla wafer crumbs
1 cup chopped walnuts
1/3 cup powdered sugar
1/3 cup unsweetened baking cocoa
1 (8-ounce) package cream cheese, softened
1 tablespoon cornstarch
1 (14-ounce) can sweetened condensed milk (not evaporated milk)
1 large egg
1 1/2 teaspoons peppermint extract or 1 tablespoon green cremede menthe
Green food color (optional)
Chocolate Drizzle:1 cup semisweet chocolate chips1 1/2 teaspoons vegetable shortening

  • Heat oven to 350°F (175°C).
  • In medium saucepan, melt 1/2 cup butter;stir in crumbs, walnuts, sugar and cocoa. Press firmly on bottomof ungreased 13 x 9 x 2-inch baking pan to form crust.
  • In small bowl, beat cream cheese, remaining2 tablespoons butter and cornstarch until fluffy.
  • Gradually beat in sweetened condensedmilk then egg, peppermint extract and food color, if desired.
  • Pour evenly over crust.
  • Bake 25 minutes or until center is set.Cool.
  • Prepare Chocolate Drizzle: Melt chocolatechips with shortening in a microwave-safe bowl on HIGH for 1to 1 1/2 minutes, stirring after 1 minute, until smooth. Drizzleover top of bars. Refrigerate until chilled. Cut into bars. Storecovered in refrigerator.

    Makes 24 to 36 bars.

    So, the cheesecake part of this recipe is easy. Blend two batches of ingredients, toss them in the freezer, and done. You can walk away at this point. Top the bars with some blueberries and mint, and call it good. Or you can continue on to the caramel. The only reason this recipe is hard is because of the caramel. Hey, I was super intrigued when this popped up on my news feed. I m deathly allergic to cashews and a few people I know and cook for are as well. Do you think that almonds could do the job? Any other nut besides peanuts cashews and pistachios?
