Walnut-Goat Cheese Salad with Orange Vinaigrette recipe

Recipe: Walnut-Goat CheeseSalad with Orange Vinaigrette

Orange Vinaigrette:1/4 cup orange juice3 tablespoons white wine vinegar1/4 teaspoon saltFreshly ground black pepper to taste1/2 cup vegetable oil1/4 cup extra virgin olive oilFor Salad:6 cups mixed salad greens1/2 cup chopped walnuts, toasted1 (6-ounce) package goat cheese, thinlysliced

  • For Orange Vinaigrette: Combine orangejuice and next 3 ingredients in container of an electric blender.With motor running, gradually add oils ina slow steady stream, processing until blended.Makes 1 cup.
  • For Salad: Arrange lettuce, walnuts andgoat cheese decoratively on a serving plate.
  • Serve with Orange Vinaigrette.

    Makes 6 servings.
