Walnut Cheese Snaps recipe

These tasty walnut and cheese crisp snacksare reminiscent of a thin, savory shortbread.

Recipe: Walnut Cheese Snaps

1/2 cup softened butter
1 1/2 cups all-purpose flour
1/4 teaspoon each: baking powder, cayenne pepper and salt
1 cup finely grated, sharp cheddar cheese
1/2 cup finely chopped California Walnuts
2 tablespoons freshly grated Parmesan cheese

  • In medium bowl, cream butter; set aside.
  • In small bowl, mix together flour, bakingpowder, cayenne pepper and salt; stir into butter. Add cheddarcheese, walnuts and Parmesan cheese. Mix well using hands untilsoft dough forms. Shape mixture into two rolls. Wrap in plasticwrap; chill for at least 3 hours.
  • Cut each roll into 1/8-inch thick slices.Place on baking sheet.
  • Bake at 350°F about 8 to 10 minutesor until a light golden brown. Remove from oven. Leave on bakingsheet until just firm, lift onto wire rack to cool completelybefore storing in sealed containers.

    Makes about 6 dozen snaps.
