Recipe: Walnut Banana Cookies
3/4 cup quick-cooking (1 minute) oats1 3/4 cups all-purpose flour1/2 teaspoon salt1 teaspoon baking powder12 tablespoons unsalted butter, softened2/3 cup granulated sugar1/3 cup firmly packed brown sugar1 large egg1/2 teaspoon vanilla extract1 large banana1 1/4 cups California walnuts, toastedand chopped
Makes 30 cookies.
Tip: For flatter cookies (as they appearin the photograph), you may need to press the spooned cookiedough slightly with the flat bottom of a lightly greased glass.
