Smooth and creamy no-bake strawberry cheesecakein a vanilla wafer crumb crust.
Recipe: Very Smooth VanillaCheesecake
1 cup vanilla wafer crumbs
Combine vanilla wafer crumbs, ground nuts,2 tablespoons sugar, and melted butter; press onto the bottomof a 9-inch springform pan. Bake at 325°F (160°C) for10 minutes then cool.
Soften unflavored gelatin in cold water;stir over low heat until dissolved. Combine cream cheese and1/2 cup sugar, mixing at medium speed with an electric mixeruntil well blended.
Drain frozen strawberries, reserving theliquid. Add milk and enough liquid to equal 1 cup. Add the milkmixture to the gelatin and then gradually stir into the creamcheese; mixing until well blended. Chill until slightly thickened.
Fold in cream whipped to soft peaks andthe strawberries; pour over the crust. Chill until firm.
