Vanilla Pecan Pralines recipe

Keep some of these buttery, vanilla-scentedtreats on hand for unexpected guests…if you can!

Recipe: Vanilla Pecan Pralines

2 cups granulated sugar
1/2 cup light corn syrup
1/2 cup water
2 cups pecan halves
1/4 cup butter
1 tablespoon vanilla extract

  • Butter a baking sheet and set aside.
  • Heat sugar, syrup and water in a heavysaucepan until sugar is dissolved. Add pecans and bring to aboil, stirring occasionally, until it reaches the soft-ball stage(see note). Remove saucepan from heat and add butter and vanilla;let cool.
  • Beat with a wooden spoon until mixturegradually changes to an opaque color and becomes creamy. Dropby tablespoonfuls onto a buttered baking sheet and allow to harden.

    Makes 24 pieces.

    Note: ‘Soft-ball stage’ is a testfor candy describing the point at which a drop of boiling syrupimmersed in cold water forms a soft ball that flattens of itsown accord when removed. On a candy thermometer, the soft-ballstage is between 234° and 240°F.

    Brown sugar, cream, salt, margarine and pecans are microwaved then flavored with vanilla and dropped onto waxed paper to cool into bite sized pralines.
