Turkey Medallions Piccata recipe

A simple dish of saut ed turkeymedallions sprinkled with fresh lemon juice and capers.

Recipe: Turkey MedallionsPiccata

1 pound turkey, thinly sliced
Salt and pepper to taste
1 garlic clove, crushed
1 tablespoon olive oil
1 tablespoon butter or margarine
2 tablespoons fresh lemon juice
4 teaspoons capers

  • Lightly sprinkle one side of sliced turkeywith salt and pepper.
  • In a large, non-stick skillet over medium-highheat, saute the turkey with the crushed garlic in olive oil andbutter for approximately 2 to 3 minutes per side, or until goldenand fully cooked. Remove the skillet from the heat and sprinklethe lemon juice and capers over the turkey.

    Makes 4 servings.
