Tucker’s is a classic buttermilk coffeecakewith a nutty streusel topping.
Recipe: Tucker’s Coffeecake
3 cups all-purpose flour 3 cups packed brown sugar 1 teaspoon baking soda 1/2 teaspoon salt 1 cup (2 sticks) butter or margarine, melted 1 cup buttermilk 1 teaspoon vanilla extract 1 large egg 1 cup chopped pecans
In a bowl combine flour, brown sugar,baking soda, and salt. Add melted butter; mix well. Reserve 1cup of the crumb mixture for the topping.
To the remaining crumb mixture, stir inbuttermilk, vanilla, and egg; the batter will be lumpy. Pourinto a greased 13 x 9-inch baking pan.
Add chopped pecans to the reserved topping;mix thoroughly. Sprinkle over the dough; pressing in lightly.
Bake at 350°F (175°C) for 30 to35 minutes, or until cake tests done when a wooden pick insertedin center comes out clean.
Makes 12 servings.
