Tropical Sweet Potato Salad recipe

Tropical Sweet Potato Salad.

A great choice instead of the traditionalpotato salad. The spices, pineapple and toasted pecans providethe perfect complement to the naturally sweet yams.

Recipe: Tropical Sweet PotatoSalad

2 pounds sweet potatoes (yams), peeledand cubed2 tablespoons lemon juice1 cup chopped celery1 bunch green onions, sliced1 (20-ounce) can pineapple chunks, drained1/4 cup chopped pecans, toasted1/3 cup light mayonnaise1 teaspoon grated orange rind2 tablespoons orange juice1 tablespoon honey1/4 teaspoon ground ginger1/8 teaspoon ground nutmegSalt to taste

  • In a saucepan, cook sweet potatoes for8 to 10 minutes in boiling water just until tender. Do not overcook.Drain and toss with lemon juice; set aside.
  • Add the celery, green onions, pineapplechunks, and pecans.
  • In a small bowl, combine mayonnaise, orangerind, orange juice, honey, ginger, and salt.
  • Mix the mayonnaise dressing with the sweetpotato mixture, tossing gently. Serve immediately or cover andchill.
