Tropical Mango Bars recipe

These tropical fruit layered cookie barshave a rich buttery shortbread crust with a sweet cooked mangofilling topped with a crunchy oat crumb topping.

Recipe: Tropical Mango Bars

2 cups all-purpose flour
1/2 cup granulated sugar*
1 cup butterFilling:
4 cups chopped mangoes
3/4 cup granulated sugar
1/3 cup water
1 teaspoon fresh lemon juice
3 tablespoons cornstarch
3 tablespoons waterTopping:
2 cups quick oats
1/4 cup all-purpose flour
1/2 cup granulated sugar
2/3 cup butter

  • Preheat oven to 350°F (175°C).
  • Crust, combine flour and sugar. Cut inbutter. Press into 13 x 9 x 2-inch pan. Bake for 7 to 10 minutesor until lightly brown.
  • Filling, combine in a saucepan mangoes,sugar, water and lemon juice. Cook over low-medium heat untilmangoes are tender, 10 to 12 minutes. Combine cornstarch andwater in a separate bowl. Stir into mango mixture. Cook untilmixture is thick. Cool slightly. Pour over prepared crust.
  • Topping, combine oats, flour, and sugar.Cut in butter. Sprinkle over mangoes.
  • Bake for 50 minutes. Cool. Cut into bars.

    Makes 36 bars.

    in a desperate, late-ditch effort to hold on to capture some of my favorite summertime flavors, i made these creamy mango coconut bars. and oh my, am i so glad i did that. anywho, my love for all things coconutty is certainly no secret. i’ve shared a handful of coconut recipes here, and i can assure you that this isn’t the last time you’ll see it. do you like coconut? i hope you do. it’s so tropical and sweet and ever-so-slightly nutty. it makes me swoon a little.
