A banana and citrus flavored cake thatis baked in layers, topped and filled with a cream cheese andpineapple mixture. A great special occasion cake.
Recipe: Tropical Layer Cake
2 ripe bananas, peeled, mashed
2 large eggs
1 1/2 cups light vanilla flavored nonfat yogurt
1/4 cup stick butter, softened
1/4 cup frozen pineapple-orange juice concentrate, thawed, divideduse*
3 cups cake flour, unsifted
1 1/4 cups Equal® Spoonful**
1 tablespoon baking powder
2 teaspoons baking soda
1/2 teaspoon saltFrosting:
12 ounces reduced fat cream cheese, softened
1/2 cup Equal® Spoonful***
1 (8-ounce) can crushed pineapple in juice, well drained
Makes 12 servings.
* Make the remainder of the concentrateinto juice.
