Tomato Slices with Feta & Chopped Herbs recipe

A simple, Mediterranean-style fresh tomatosalad.

Recipe: Tomato Slices withFeta & Chopped Herbs

Strong Vinaigrette:1 teaspoon salt, or to taste
1 heaping teaspoon green-peppercorn mustard
Scant 1/2 teaspoon freshly ground black pepper
2 tablespoons balsamic vinegar
3 tablespoons vegetable oil
2 to 3 tablespoons olive oilFresh California tomatoes

  • Whisk all ingredients of vinaigrette together.
  • Cut tomatoes in half crosswise and fishout the seeds. Place on a platter and top with crumbled fetacheese. Sprinkle with minced chives and parsley, basil strips,salt, and freshly ground black pepper. Spoon Strong Vinaigretteover all.

    Makes about 1/2 cup vinaigrette. Servingsdependent on amount of tomatoes used.

    Chop tomatoes and put into plastic or glass bowl that’s large enough to hold all the sauce and pasta. Slice green onions, chop parsley, slice or chop basil, and chop oregano and add to tomatoes. Add olive oil and lemon juice and stir a few times to combine. Let sauce marinate on the counter for 1-4 hours.
