Tomato Salsa Fiesta recipe

Put a bowl of this fresh tomato salsa outwith some tortilla chips and you have the beginnings of a party!

Recipe: Tomato Salsa Fiesta

2 cloves of garlic, chopped finely
1 tablespoon fresh lime juice
1/2 teaspoon ground cumin
1/2 teaspoon salt
2 tablespoons vegetable oil
1 3/4 pounds fresh California tomatoes (about 4 medium) peeled,seeded, finely diced and drained
1 cup diced red onion
2 tablespoons chopped fresh cilantro or parsley
1 whole jalepeno pepper (seeds removed) chopped finely

  • Combine first four ingredients, beat inoil. Gently toss with remaining ingredients. Marinate at roomtemperature for 1 hour or several hours in the refrigerator.

    Makes about 3 cups.
