A spicy, Mediterranean-style tomato andgarbanzo salad.
Recipe: Tomato Garbanzo Salad
3 cups (about 1 1/2 pounds) diced, freshCalifornia tomatoes
1 cup chopped red onion
1/4 cup chopped parsley
1 1/2 tablespoons lemon juice
1 teaspoon finely chopped garlic
1/2 teaspoon dill
1/2 teaspoon red pepper flakes
1 teaspoon salt
1/4 teaspoon pepper
1/3 cup olive oil
2 (15 1/4-ounce) cans garbanzo beans, rinsed and drained (3 cups)
2 hard-cooked eggs, finely chopped
