Tomato Corn Relish recipe

This tasty summer relish of juicy red,vine-ripened tomatoes and golden corn makes a wonderful accompanimentto go along with grilled meats, poultry and seafood.

Recipe: Tomato Corn Relish

3/4 pound (2 medium) fresh Californiatomatoes, seeded and diced
1 cup corn kernels
1/2 cup diced green bell pepper
1/2 cup diced celery
1/3 cup diced red onion
2 1/2 tablespoons white wine vinegar
1 garlic clove, chopped finely
1/2 teaspoon granulated sugar
1 tablespoon Dijon style mustard
1/4 teaspoon red pepper flakes
1/8 teaspoon salt

  • Combine California tomatoes and remainingingredients. Serve with hot dogs and hamburgers.

    Makes 2 1/2 cups.

    Dice the tomato and onion, and roughly chop the cilantro leaves. It s best to try to get the tomato and onion pieces roughly the same size as the corn kernels to make an even relish.
