Toffee Crunch Cookies recipe

Yummy cookies flecked with crunchy toffeebits and chopped pecans.

Recipe: Toffee Crunch Cookies

1 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup butter, softened
3/4 cup firmly packed brown sugar
1 large egg
1 teaspoon vanilla extract
1 cup chopped hard toffee candy or toffee bits
1/3 cup chopped pecans

  • In a medium bowl combine flour, bakingsoda, and salt. Set aside.
  • In a large bowl beat butter and brownsugar with an electric mixer on medium speed for 30 seconds.Add egg and vanilla. Beat till thoroughly combined. Stir in theflour mixture,finely chopped toffee candy and finely choppedpecans.
  • Drop by rounded tablespoonfuls 2-inchesapart onto a baking sheet.
  • Bake at 350°F (175°C) for 10 to12 minutes. Remove from baking sheet immediately. Cool on a wirerack.

    Makes 24 cookies.

    Love, love toffee, particularly that little bit of crunch they add to cookies! Maybe I ll make these for my brothers birthday party this weekend Have you tried the new Trader Joe s dark chocolate toffee bar? It s incredible and as soon as I can get my hands on more bars, I m going to make toffee cookies with them!
