Three Cheese Crab Quesadllas.

These three cheese and crab quesadillasmake delicious appetizers that are great for entertaining.

Recipe: Three Cheese CrabQuesadillas

1 1/2 cups (8-ounces) fresh, cooked orchopped imitation crab meat
1 cup shredded Monterey Jack cheese – divided use
1/2 cup shredded mozzarella cheese
1/2 cup shredded cheddar cheese
1 (12-ounce) jar seafood cocktail sauce – divided use
2 green onions, thinly sliced
1 clove garlic, finely chopped
8 (8-inch) soft taco-size flour tortillas
2 tablespoons butter or 2 tablespoons if needed – divided use

  • Combine crab meat, 1/2 cup Monterey Jackcheese, mozzarella cheese, cheddar cheese, 1/2 cup cocktail sauce,green onions and garlic in medium bowl; mix well. Spread about1/2 cup mixture onto each of 4 tortillas; sprinkle evenly withremaining Monterey Jack cheese. Top with remaining tortillas.
  • Melt about 2 teaspoons butter in largeskillet over medium-high heat. Add one quesadilla; cook for 2to 3 minutes on each side or until golden brown. Repeat withremaining butter and quesadillas. Cut each quesadilla into eightwedges. Serve with remaining cocktail sauce.

    Makes 32 servings.

    I created these cheesy crab quesadillas very simply, with only crab meat, a bit of chopped green onion, and shredded Monterey Jack cheese stuffed inside a tortilla. My goal was to let that naturally sweet crab meat flavor and tender texture shine as brightly as possible. I didn t realize how many times Blake stole away for an ice cream cone until I overheard him telling some friends one evening. The ice cream bar is conveniently located right next to the Pizzeria. What more could any kid even one in his 40 s ask for?!
