Recipe: The Ultimate LunchboxPeanut Butter Cookies
1/2 cup creamy peanut butter (note:ifusing crunchy style, add 2 tablespoons more)
1/2 cup butter, softened
1/2 cup granulated sugar
1/2 cup firmly-packed brown sugar
1 large egg
1 teaspoon vanilla extract
1 3/4 cups flour
3/4 teaspoon baking soda
1/2 teaspoon salt
Makes 24 cookies.
- Slice-N-Bake: Prepare dough as above butdo not preheat oven until ready to bake. Roll dough into 10-inchlog. Wrap in wax paper or plastic wrap and chill several hoursuntil firm. Slice log into 1/4-inch slices and bake as above.
- Peanut Thumbprint Cookies: Prepare doughas above. Roll dough into 1-inch balls. Roll balls in beatenegg white and then into 1 cup finely chopped peanuts. Place onungreased cookie sheets, 3 inches apart. Gently press thumb incenter of each cookie. Bake as above. Press thumb gently in centerof each cookie, while warm, if deeper indentation is desired.Place large chocolate chip or drop into center, or cool and fillwith favorite jam.
