Texas Peanut Brittle recipe

Tiny bubbles are caught in this lighterversion of classic peanut brittle.

Recipe: Texas Peanut Brittle

1 cup granulated sugar
1 cup raw peanuts
1/2 cup light corn syrup
1/8 teaspoon salt
1 teaspoon butter or margarine
1 teaspoon vanilla extract
1 teaspoon baking soda

  • In a microwave-safe dish, stir togethersugar, peanuts, corn syrup and salt; mix well. Microwave on highfor 6 to 9 minutes or until light brown.
  • Add butter and vanilla, stirring well.Microwave on high for 2 minutes.
  • Add baking soda and gently stir untillight and foamy.
  • Pour into a buttered baking sheet thathas sides. Let cool then break into pieces.

    Makes 16 servings.
