Texas Caviar Dip recipe

Ah yes, beans…the caviar of cowboys!Serve at room temperature with corn chips or chips.

Recipe: Texas Caviar Dip

2 (14 1/2-ounce each) cans black-eyedpeas, drained1 (15 1/2-ounce) can white hominy, drained2 medium tomatoes, chopped4 green onions, chopped2 garlic cloves, finely minced1 medium bell pepper, seeded and chopped1 jalapeno pepper, seeded and chopped(use gloves)1/2 cup chopped onion1/2 cup fresh parsley, chopped1 (8-ounce) bottle Italian salad dressing

  • Combine all ingredients except Italiandressing; mix well. Pour salad dressingover mixture; cover and marinate at least 2 hours in refrigerator.
  • Drain and serve with corn or tortillachips.

    Makes 7 cups.
