These nearly flourless brownies will remindyou of chocolate truffles they’re so moist and chocolatey!
Recipe: Terrific TruffleBrownies
1 1/4 cups butter3/4 cup unsweetened baking cocoa1 cup plus 1 tablespoon granulated sugar- divided use3 tablespoons all-purpose flour2 teaspoons vanilla extract4 large eggs, separated
Heat oven to 425°F (220°C). Greasebottom of a 9-inch square baking pan; set aside.
Melt butter over low heat. Add cocoa and1 cup sugar; stir well. Remove from heat; cool about 5 minutes.
Stir in flour and vanilla. Add egg yolks,one at a time, beating well after each addition.
Beat egg whites with 1 tablespoon sugaruntil soft peaks form; gently fold into chocolate mixture.
Spoon batter into prepared pan.
Bake 18 to 20 minutes or until edges arefirm (center will be slightly soft). Cool completely. Refrigerateabout 4 hours. Let stand at room temperature about 15 minutesbefore serving.
Garnish with powdered sugar, if desired,just before serving.
Powdered sugar (optional garnish)
Makes 20 servings.
