Tasty Black-Eyed Peas recipe

Quick and easy, Louisiana-style black-eyedpeas with tomatoes, green bell pepper and onion saut edin bacon drippings.

Recipe: Tasty Black-EyedPeas

2 (10-ounce) packages frozen black-eyedpeas1 medium green bell pepper, chopped1 small onion, chopped3 tablespoons bacon drippings1 (7 1/2-ounce) can whole tomatoes, undrainedand chopped1/2 teaspoon salt1/4 teaspoon pepper

  • Cook black-eyed peas according to packagedirections; drain well, and set aside.
  • Saute green bell pepper and onion in bacondrippings until tender. Add peas, tomatoes, salt and pepper;cook over low heat until thoroughly heated, stirring often.

    Makes 6 servings.
