Tangerine Sunshine Cake recipe

A cake mix at the core of the recipe givesa quick start in producing a delectable dessert. The tangerineadds freshness and a nice twist from a traditional yellow cake.

Recipe: Tangerine SunshineCake

1 (18.25-ounce) package yellow cake mix
1 (3.4-ounce) package instant vanilla pudding mix
1 tangerine, peeled and chopped
4 large eggs
1/3 cup vegetable oil
1 cup water
1/4 cup powdered sugar
1 tangerine, peeled and chopped
1 (8-ounce) container non-dairy whipped topping

  • In a mixer bowl combine cake mix, instantpudding mix, tangerine, eggs, oil, and water. Beat with an electricmixer on medium speed for 4 minutes. Pour into a well-greasedfluted cake pan.
  • Bake at 350°F for 50 minutes or untilthe center is set and wooden pick inserted into center comesout clean. Cool in the pan for 5 minutes. Invert onto a wirerack to cool completely.
  • To serve, place cooled cake on servingplatter; sprinkle with powdered sugar. Fold remaining tangerineinto non-dairy whipped topping. Spread over the cake. Refrigerateuntil ready to serve.

    Makes 12 servings.
