Sweet Potato Tea Cake recipe

Call it tea cake or call it quick bread,or call it delicious…all three work for this sweet potato treat.

Recipe: Sweet Potato TeaCake

1 1/2 cups all-purpose flour1/2 teaspoon baking soda1/2 teaspoon salt1 1/2 teaspoon ground cinnamon1 cup granulated sugar1 cup sweet potatoes, cooked and mashed2 large eggs, beaten2/3 cup butter, melted1/2 cup shredded coconut1/2 cup seedless raisins1/2 cup chopped walnuts

  • Measure flour, soda, salt, cinnamon andsugar into mixing bowl. Make a well in center. Measure remainingingredients into well. Stir carefully, just enough to mix.
  • Pour into greased 9 x 5-inch loaf pan.
  • Bake at 350°F (175°C) for 1 hour.Remove from pan. Cool before slicing.

    Makes 8 servings.
