Sweet Potato Pudding recipe

Creamy, baked sweet potato pudding. Serveas a dessert or side dish.

Recipe: Sweet Potato Pudding

1 cup granulated sugar
1/8 cup applesauce
1 tablespoon butter, softened
1 cup milk
1 large egg
2 cups grated sweet potato
1 teaspoon vanilla extract

  • Combine sugar, applesauce and butter ina large mixing bowl. Beat the egg and add it to the sugar mixturealong with the milk, sweet potato and vanilla. Stir to mix well.Transfer into a greased or sprayed 5 x 9 x 2-inch baking dish.
  • Bake in a preheated 350°F oven, 1hour. Stir 2 or 3 times to keep from burning. Bake until brownon top.
