Fun and tasty sweet potato sliced candyswirls filled with peanut butter.
Recipe: Sweet Potato-PeanutButter Wheels
1 medium sweet potato1 tablespoon margarine or butter1 teaspoon salt1 teaspoon vanilla extract3 (16-ounce) boxes confectioners’ (powdered)sugar1 cup creamy peanut butter
Scrub the sweet potato and boil untiltender. Cool and peel. In a food processor puree the sweet potatowith the margarine. Add the salt and vanilla, blending well.Set aside 2 tablespoons of confectioners’sugar gradually untilthe mixture is the consistency of thick, cooked dough. Wrap ina tea towel and chill.
Use enough sweet potato mixture to rollout a circle 1/4-inch thick and 12-inches in diameter. Keep theremaining sweet potato mixture covered with a damp tea towel.
In a saucepan heat the peanut butter andspread in a thin layer over the rolled out sweet potato mixture.Roll like a jelly roll. Slice into 1-inch pieces, keeping theround shape.
Prepare the remaining sweet potato mixtureand peanut butter.
Store the candy in a tightly covered container.
Makes about 4 dozen candies.
