Sweet Potato Craisin Loaves recipe

A festive spiced sweet potato quick breadlaced with sweet-tart dried cranberries.

Recipe: Sweet Potato CraisinLoaves

1 1/2 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon ground nutmeg
1 teaspoon ground cinnamon
3/4 cup granulated sugar
1/2 cup pure maple syrup
1 1/2 cups mashed cooked yams or sweet potatoes
1/2 cup butter, softened
2 large eggs
1 cup half-and-half or light cream
1/2 cup Ocean Spray Craisins (dried cranberries)
1/4 cup chopped walnuts or pecans

  • Preheat oven to 350°F (175°C).Generously grease two 9 x 5x 2 1/2-inch
    baking pans; set aside.
  • In medium bowl combine flour, baking powderand spices, mixing well. Set
  • In large mixing bowl, beat together thesugar, syrup, sweet potatoes and
    butter until smooth. Add the eggs and blend well. Alternately,stir in the half and half and flour mixture to the sweet potatomixture, until just mixed. Do not over mix. Fold in the craisinsand nuts. Pour into prepared pans.
  • Bake for 45 minutes or until a woodenpick inserted in center comes out clean. Cool for 10 to 15 minuteson wire rack before removing from pans. Cool completely and wraptightly to store.

    Makes 2 loaves.

    Cooked sweet potatoes are mixed into this sweet potato cranberry quick bread batter, giving it a moist texture and a great flavor. A perfect fall breakfast or snack! The sweet potato gives this bread a sweet, earthy flavor, and helps to keep it very moist.  Plus I love the color it s perfect for this time of year!  I added applesauce too so that I only had to use ? cup of oil.  I love substituting applesauce for oil when I can to keep my baked goods a little bit lighter.
