Sweet Potato Cinnamon Buns with Orange Glaze recipe

Packaged yeast roll mix makes preparationof these delicious buns ever so easy! Serve them as part of abreakfast or brunch buffet, or pack a tasty bun in a sack lunchfor dessert.

Recipe: Sweet Potato CinnamonBuns with Orange Glaze

1 package hot roll mix1/2 cup sweet potatoes, cooked and mashed1/2 cup water3 tablespoons packed light brown sugar1/2 cup chopped pecans1/2 teaspoon ground cinnamonOrange Glaze:1/2 cup orange juice
1 teaspoon grated orange rind
1 1/2 cups confectioners’ (powdered) sugar

  • Mix hot roll mix according to directions.Add the sweet potatoes and work them in with the roll mix. Letrise until dough is double in size.
  • Roll out to 1 1/2-inch thickness. Spreadchopped pecan pieces, cinnamon and sugar onto dough. Roll upand cut into 1/2-inch slices. Place slices in a buttered muffintin.
  • Bake at 375°F (190°C) for 20 minutes.
  • Frost with Orange Glaze.
  • For Orange Glaze: Mix all ingredientstogether.

    Makes 12 servings.

Whaaaat? 18 years without sweet potatoes? Good thing you saw the better side of the potato. You re going to get me to make homemade cinnamon rolls yet!
