Sweet Potato Bread Pudding with Apple Cider Glaze recipe

An extraordinary bread pudding that’s sureto become a fall and winter favorite dessert.

Recipe: Sweet Potato BreadPudding with Apple Cider Glaze

3 large eggs1/2 cup granulated sugar1 cup firmly packed brown sugar1 1/2 cups half-and-half1 1/2 cups milk1/4 cup butter, melted1 tablespoon vanilla extract1/4 teaspoon ground nutmeg2 medium sweet potatoes, peeled and grated5 cups cubed French bread, lightly packedApple Cider Glaze:1/4 cup butter
3 tablespoons packed brown sugar
3 tablespoons granulated sugar
6 tablespoons apple cider
2 tablespoons half-and-half

  • Combine eggs, sugar, and brown sugar inlarge bowl; beat until smooth with a whisk. Add half-and-half,milk, melted butter, vanilla extract, nutmeg, and grated sweetpotato. Stir well. Add cubed French bread to egg mixture; stiruntil bread is well moistened. Cover and chill 30 minutes, stirringonce.
  • Preheat oven to 325ºF (160ºC).
  • Spoon bread mixture into a well greased10-inch cast-iron skillet or a 7 x 11-inch baking dish.
  • Bake for 1 hour or until a wooden pick,inserted into the center, comes out clean. Serve warm with AppleCider Glaze.
  • For Apple Cider Glaze: Combine all ingredientsin a small saucepan. Bring to a boil, stirring well. Reduce heatand simmer for 5 minutes, stirring constantly. Let stand 3 minutes.Serve warm over Sweet Potato Bread Pudding. Makesabout 1 1/4 cups.

    This fantastic dessert is perfect for the cool months of late fall and winter. Cubes of tender pumpkin bread are baked in a rich custard laced with bourbon and maple syrup. Crisp apple cider is the base of a buttery caramel sauce spiced with fresh ginger, cinnamon, nutmeg, and star anise. Forget about serving the same-old pumpkin pie at Thanksgiving and put this out instead for a new twist on two old classics. The recipe includes directions for making your own pumpkin bread to use in the pudding, but you can of course also use a loaf of pumpkin bread from your favorite bakery. Brioche or cinnamon-raisin bread would also work perfectly.
