Recipe: Sweet Potato Bars
1/2 cup butter1 1/2 cups brown sugar, firmly packed2 large eggs1 cup all-purpose flour1 cup whole-wheat flour2 teaspoons baking powder2 teaspoons ground cinnamon1/2 teaspoon baking soda1/2 teaspoon salt1/2 teaspoon ground allspice1 pound sweet potatoes, pared and shredded(about 2 cups)2 cups uncooked old-fashioned rolled oats2 cups coarsely chopped pecans or walnuts
Makes about 36 bar cookies.
For Drop Cookies: Drop dough by heapingtablespoons on lightly greased cookie sheets and flatten to l/2-inchthickness. Bake at 350°F (175°C) for 20 to 25 minutesuntil lightly browned. Makes about 36 3-inch cookies.
