Recipe: Sweet and Spicy Pineapple-JalapenoRelish
1 medium onion, chopped
2 tablespoons fresh ginger, finely minced
6 jalapeno peppers, finely chopped (see Note)
1 teaspoon ground cumin
1/2 cup rum
1 fresh pineapple, diced1/2 cup fresh lime juice
1/2 cup raw (turbinado) sugar
1/4 cup fresh cilantro, chopped
Salt and freshly ground pepper
Makes about 4 cups.
Note: Caution! Be sure to wear rubber gloveswhen preparing the chiles or you will experience an intense burningsensation in your hands not to mention what would happen shouldyou rub your eyes! This is especially important when preparinglarger quantities of hot peppers.
