Sweet and Spicy Pineapple-Jalapeno Relish recipe

A sassy pineapple and jalapeno relish thatgoes well with roasted meats, poultry and seafood. Or serve itas a tasty appetizer spooned over cream cheese with tortillachips or crackers.

Recipe: Sweet and Spicy Pineapple-JalapenoRelish

1 medium onion, chopped
2 tablespoons fresh ginger, finely minced
6 jalapeno peppers, finely chopped (see Note)
1 teaspoon ground cumin
1/2 cup rum
1 fresh pineapple, diced1/2 cup fresh lime juice
1/2 cup raw (turbinado) sugar
1/4 cup fresh cilantro, chopped
Salt and freshly ground pepper

  • In saucepan over medium heat, sautthe onions, ginger, jalapenos, and cumin for 6 minutes.
  • Add the rum and cook until almost allis evaporated. Add the pineapple, lime juice, and sugar, bringto simmer and then remove from heat.
  • Stir in the cilantro, salt and pepperto taste.

    Makes about 4 cups.

    Note: Caution! Be sure to wear rubber gloveswhen preparing the chiles or you will experience an intense burningsensation in your hands not to mention what would happen shouldyou rub your eyes! This is especially important when preparinglarger quantities of hot peppers.
