Swedish Lace Cookies recipe

These cardamom-scented cookies bake upthin and delicate. Serve them at tea or with a fruity sorbet.

Recipe: Swedish Lace Cookies

1/2 cup butter or margarine
2/3 cup granulated sugar
1/4 cup light corn syrup
2 tablespoons water
3/4 cup bran flakes
1/2 cup all-purpose flour
1/2 teaspoon ground cardamom
1/4 teaspoon ground ginger
1/4 teaspoon baking powder
1/4 teaspoon baking soda
1 teaspoon vanilla extract

  • Preheat oven to 375°F (190°C).Lightly grease a baking sheet; set aside.
  • In a saucepan, melt butter; stir in sugar,corn syrup and water. Stir until sugar is dissolved. Remove fromheat.
  • In a medium mixing bowl stir togetherbran, flour, cardamom, ginger, baking powder and baking soda.Add to syrup mixture with vanilla. Mix well and let rest for10 minutes.
  • Drop dough by teaspoonfuls about 2½-inchesapart on prepared baking sheet. Bake 5 to 7 minutes or untillight brown. Cool on baking sheet for 2 minutes before removingto wire racks.
  • Frost if desired.

    Makes 36 cookies.

    These Scandinavian sugar cookies are simple to make, just form them into bars and cut after baking. This is a recipe that my husband s nana has made for years. They are the easiest cookies I have ever made. The ingredients were harder to find than it was to make the cookies. They are like potato chips, you cannot eat just one!
