An irresistible version of the classicchocolate chip cookie boasting an incredible infusion of flavorfrom the addition of both toasted coconut and toasted nuts.

Recipe: Superior ChocolateChip Cookies
1 cup sweetened flaked coconut1 cup chopped walnuts or pecans2 1/2 cups all-purpose flour1 teaspoon baking soda1/2 teaspoon baking powder1 teaspoon kosher or sea salt3/4 cup firmly packed dark brown sugar3/4 cup granulated sugar1 cup unsalted butter, softened2 large eggs2 teaspoons vanilla extract2 cups semisweet chocolate chips
Preheat oven to 375° (190°C).
Line two baking sheets with parchmentpaper or aluminum foil; spread coconut out on one baking sheetand walnuts on the other. Toast the coconut and walnuts in theoven until golden, stirring each frequently. Watch closely, asthe coconut will toast faster and finish first. Cool both. Crushthe coconut into fine crumbs and coarsely chop the walnuts.
In medium bowl combine flour baking soda,baking powder, salt and the crushedcoconut; mixing well. Set aside.
Cream sugars and butter in a large bowlusing an electric mixer at medium speeduntil texture is fluffy and light in color. Add eggs and vanilla;continue to beat an additional 3 minutes oruntil creamy textured.
By hand, stir in flour mixture untiljust mixed; gently fold in the chocolate chipsand toasted walnuts. (Do not over-mix at this stage.)
Drop by tablespoonfuls onto parchment-linedor non-stick baking sheets, 2-inches apart.
Bake on thetop shelf of the oven for 10 to 12 minutes, or until lightlybrowned, turning the baking sheet aroundhalfway through the baking time to allow even baking of thecookies.
Transfer cookies to wire racks to cool.Store in tightly sealed container.
Makes 5 dozen or 60 cookies.
