Sundried Tomato Dipping Sauce recipe

Especially good with roasted potato wedgesor French fries.

Recipe: Sundried Tomato DippingSauce

1/4 cup bottled, chopped sun-dried tomatoespacked in oil1/2 teaspoon good-quality olive oil1 teaspoon minced garlicPinch ground clove1/4 teaspoon salt1/8 teaspoon ground black pepperPinch paprikaPinch cinnamon3/4 cup low-fat mayonnaise

  • In a small food processor, process tomatoesuntil pureed. Add all remaining ingredients except mayonnaiseto the processor and process until smooth.
  • Remove 1 1/2 tablespoons of the tomatomixture to a small bowl.
  • In small mixing bowl, stir together mayonnaiseand tomato mixture until well combined. Transfer to a servingbowl. Serve at room temperature.

    Makes 8 servings.

    I had made this for our recent pool party had to give people the recipe before they left. It s so simple delicious!! I absolutely love the deep flavor of sun dried tomatoes can eat them by themselves. I served this along with carrots, butter crackers, melba toast, and other veggies. My 3 yr old son also was one that kept going back for more. Thank you Jennifer!
