Stuffed French Toast with Fresh Berry Topping.

Your favorite strawberry preserves mixedwith creamy ricotta cheese comprise the delectable filling inthese French toast ‘sandwiches.’ Fresh berries and a dustingof powdered sugar top them off for an attractive and colorfulpresentation.

Recipe: Stuffed French Toastwith Fresh Berry Topping

2 cups mixed fresh berries*
2 tablespoons granulated sugar
2/3 cup ricotta cheese
1/4 cup strawberry preserves
3 large eggs
2/3 cup NESTL ® CARNATION® Evaporated Milk
2 tablespoons packed brown sugar
2 teaspoons vanilla extract
12 (3/4-inch) slices French bread
2 tablespoons butter
1/4 cup powdered sugar
Maple syrup

  • Combine berries and granulated sugar ina small bowl. Combine ricotta cheese and strawberry preservesin another small bowl; mix well. Combine eggs, evaporated milk,brown sugar and vanilla in a pie plate or shallow pan; mix well.
  • Spread ricotta-preserve mixture evenlyover half the bread slices. Top with remaining slices of breadto form sandwiches.
  • Heat butter in a large, nonstick skilletor griddle over medium heat. Dip sandwiches in egg mixture, coatingboth sides. Cook on each side for about 2 minutes, or until goldenbrown.
  • Sprinkle with powdered sugar; top withberries. Serve with maple syrup, if desired.

    Remove the French toast from the oven and arrange them on a serving platter. Top 4 slices of the toast with a large dollop of the blackberry-caramel mascarpone and some of the blackberries. Cover with the remaining 4 pieces of toast and drizzle each with some of the warm blackberry caramel sauce. Sprinkle with confectioners’ sugar, garnish with fresh mint sprig and serve.
