Strawberry Tofu Cheesecake recipe

Totally tofu strawberry cheesecake.

Recipe: Strawberry Tofu Cheesecake

2 cups lemon/lime flavored soda – divideduse
3 (1/4-ounce) envelopes unflavored gelatin
2 tablespoons honey
1 cup sliced strawberries
1 teaspoon vanilla extract
1 teaspoon lemon juice
4 ounces tofu
1 (9-inch) graham cracker pie crust

  • Combine 1/2 cup lemon/lime soda and unflavoredgelatin in a bowl; stir.
  • Heat remaining lemon/lime soda then pourover the gelatin and stir until dissolved. Add honey. Pour intoa blender then add sliced strawberries, vanilla, lemon juice,and drained tofu. Process until smooth and creamy.
  • Pour into graham cracker pie crust andchill until firm.

    Makes 8 servings.

    Use a sharp knife with a thin blade to cut the jelly hearts. Prepare a large jar of boiling water. Dip the knife into the water. Wipe it off and cut. Repeat that with every cut to get a nice clean cut with no crumbs sticking at the sides. I ve tried your Strawberry Cheesecake recipe a few times and everyone loves it! I m now toying with the idea of making a Mango Cheesecak but substituting cream cheese with mascarpone instead. Wonering if this will be fine?
