Strawberry-LemonParfait recipe

Quick, easy and lemony-yummy strawberryparfaits made with purchased lemon curd which is folded intowhipped cream and then layered with fresh strawberry.

Recipe: Strawberry-LemonParfait

1 /2 cup whipping cream
1/2 cup prepared lemon curd* (or make your own, see a recipehere)
Grated peel of 1 lemon
2 pint baskets fresh California strawberries, stemmed and sliced
Mint sprigs, for garnishSmall crisp cookies for accompaniment

  • In medium bowl whip cream to form stiffpeaks.
  • In another medium bowl mix about one-fourthof the cream into lemon curd to blend thoroughly, then fold inremaining cream and the lemon peel. Chill.
  • To serve, arrange 3 layers of strawberriesand 2 layers of lemon cream in each of 4 stemmed glasses, beginningand ending with strawberries. Garnish with mint. Serve with smallcrisp cookies.

    Makes 4 servings.

    * Lemon curd is available in the jam andjelly section or gourmet foods section of most supermarkets.
