Stove-Top Cookies recipe

These saucepan cookies are loaded withdates, crispy rice cereal and pecans.

Recipe: Stove-Top Cookies

Powdered sugar or flaked coconut1 cup granulated sugar2 large eggs, lightly beaten1 cup chopped dates1 tablespoon butter or margarine2 cups crisped rice cereal1 cup chopped pecans1 teaspoon vanilla extract

  • Sprinkle powdered sugar or coconut evenlyonto a parchment or wax paper-lined 15 x 10 x 1-inch pan. Setaside.
  • Combine sugar and eggs in a large saucepan;stir well. Add dates and butter; cook over low heat, stirringconstantly, 8 minutes or until mixture is thickened and bubbly.Remove from heat; stir in cereal, pecans and vanilla, mixingwell.
  • Spread cereal mixture evenly onto preparedpan. Let stand for 15 minutes, then roll the mixture into a 15-inchlog, beginning at long side. Let cool completely. Cut into 1/2-inchthick slices.

    Makes about 2 1/2 dozen.

    These cookies were always served for school lunch. I got the recipe after marrying from one of the cooks, and have made it many times since. This cookie generally is seen with cocoa, but I like this one better, it doesn t have any.
