Stewed Okra and Tomatoes recipe

A southern favorite, stewed okra with tomatoes,garlic, onions, herbs…and this version includes freshly gratedParmesan cheese stirred in just before serving.

Recipe: Stewed Okra and Tomatoes

2 tablespoons butter
1 tablespoon crushed garlic
4 cup chopped fresh (in season) or frozen okra
3 cup freshly diced tomatoes
1 cup chopped onions
1 teaspoon granulated sugar
1/2 teaspoon black pepper
1/2 teaspoon dried thyme
1/4 teaspoon dried rosemary
1/4 cup freshly grated Parmesan or Romano cheese

  • In a large skillet, heat the butter andsaut the garlic over medium heat until light and browned.
  • Add the okra; reduce heat to low and cookfor 15 minutes, stirring occasionally.
  • Add the tomatoes, onions, sugar, pepper,thyme, and rosemary and continue cooking for 5 minutes.
  • Remove from the heat and stir in the cheese.

    Makes 6 servings.
