Stained Glass Fruit Salad recipe

A delightful fruit salad mold made withcolorful cubes of fruit-flavored gelatin (the ‘stained glass’)combined with a fluffy mixture of whipped cream, lemon gelatinand crushed pineapple.

Recipe: Stained Glass FruitSalad

1 (6-ounce) box cherry gelatin1 (6-ounce) box lime gelatin1 (6-ounce) box orange gelatin1 (6-ounce) box lemon gelatin1 (20-ounce) can crushed pineapple, undrained2 cups heavy cream

  • Dissolve cherry gelatin in 1 cup of boilingwater. Stir in 1/2 cup of cold waterand pour into an 8-inch square pan. Refrigerate until firm. Repeatthis same process with the lime and orangeflavors only.
  • In a small sauce pan, mix together thelemon gelatin with the undrained pineapple.Bring mixture to a boil, stirring, and cook 5 minutes. Set asideand allow to cool to room temperature untilthickened.
  • When cherry, lime, and orange gelatinare firm, cut into 1-inch cubes.
  • Whip cream into stiff peaks, and foldit into the cooled lemon-pineapple mixture.
  • Fold gelatin cubes into the whipped creammixture.
  • Pour the gelatin-cream mixture into a9-inch tube pan.
  • Chill for several hoursbefore unmolding.

    Makes 8 to 10 servings.

    Christmas Jello ~ You could adapt this recipe for any holiday by changing the gelatin dessert. You can layer the jello or make a stained glass pattern. Either way, letting the jello set in a mold gives it a beautiful presentation.
