Spring Berry Compote recipe

A cool refreshing dessert to have on warmdays. Fresh berries by the bowlful, dressed in a citrusy glazeadd sparkle to a meal’s conclusion.

Recipe: Spring Berry Compote

1/2 pint fresh raspberries
1/2 pint fresh blueberries
1/2 pint strawberries, hulled, quartered
1/2 cup granulated sugar
2 tablespoons frozen orange juice concentrate

  • In a saucepan over medium-heat, heat raspberriesand blueberries; simmer 5 minutes.
  • Add the strawberries and simmer untilstrawberries begin to soften ( about 3 minutes).
  • Add sugar and orange juice concentrateand simmer until sugar dissolves (about 3 more minutes).
  • Chill 1 hour. Stir before serving andspoon into dessert dishes

    Makes 8 servings.
