Spiral Cookies recipe

These whimsical pink-and-white spiral cookiesare lovely served with tea among friends.

Recipe: Spiral Cookies

1 cup butter, softened1 1/2 cups granulated sugar1 1/2 teaspoons baking powder1/2 teaspoon salt1 large egg1 teaspoon vanilla extract1/2 teaspoon peppermint extract (or otherflavor)2 1/2 cups all-purpose flourRed paste food coloring (or other color)

  • In a large mixing bowl beat butter withan electric mixer on medium to high speed for 30 seconds. Addthe sugar, baking powder and salt; beat until combined. Beatin the egg, vanilla and extract until well combined. Stir inflour until just mixed.
  • Divide dough in half. Tint one portionof the dough with paste food coloring. Knead coloring into doughuntil well mixed. If dough is too sticky to handle, wrap eachhalf in waxed paper or plastic wrap and chill about 1 hour oruntil easy to handle.
  • On a lightly floured surface, roll eachcolor of dough into a 12 x 8 rectangle. Using a large spatulaand your hands, place on rectangle on top to the other. Pressdown gently with your hands to seal. Starting from a long side,tightly roll up jelly-roll style. Wrap the dough in waxed paperor plastic wrap. Chill at least 2 hours or until firm.
  • Using a sharp knife, cut log into 1/4-inchslices. Place slices about 1-inch apart on an ungreased cookiesheet.
  • Bake in a 375°F (190°C) oven for8 to 10 minutes or until edges are firm and lightly browned.
  • Cool on cookies sheet for 1 minute. Transfercookies to a wire rack to cool completely.

    Makes about 4 dozen cookies.
