Spinach Quiche recipe

“Quiche is quick to make, and makesa healthy breakfast for children and adults. Make it ahead oftime, cut it into single serving pieces, wrap the individualpieces in foil or plastic wrap and freeze them. In the morningjust defrost and reheat in the microwave. Simple and very tasty.”- Cheryl Tallman

Recipe: Spinach Quiche

3/4 cup shredded Swiss cheese3/4 cup shredded cheddar cheese3/4 cup finely chopped onion1 (10-ounce) package of frozen choppedspinach, squeezed dry4 large eggs1 cup half-and-half or milk1 tablespoon all-purpose flour1/2 teaspoon salt1/2 teaspoon pepper, or to taste1 (9-inch) prepared pie crust

  • Preheat oven to 375°F (190°C).
  • Sprinkle spinach and onion in preparedpie crust. Toss cheese with flour and sprinkle in the pie crust.
  • In a large bowl gently whisk togethereggs, half-and-half (or milk), salt and pepper. Pour this mixtureover all of the other ingredients in the pie crust.
  • Bake 50 to 60 minutes, or until knifeinserted in middle comes out clean. Let stand 10 to 12 minutesbefore serving. If you are cutting it into single servings andfreezing it, let the quiche cool completely.
